My thumbnails are moving around within catalogs and do not keep in order they were created. It doesn't happen on massive scale, but they pop up in uninspected places.

Next to the Catalog Fields name there is a list icon that lets you configure what is displayed. Click on it and choose Show/Hide Fields, then select Rating.
