I feel like there's some doc I'm really missing here.
I can't find one line anywhere that tells me how to complete an 'import' line.
I'm simply looking to import all the files from one directory, but the doc says:
[at location reference] : the location to import

... well, what's that supposed to be? How about the open catalog? What am I missing? Can you please give me one sample line that imports an image into a catalog using 'import'?

And how come when I open a catalog I have to use 'open alias'. instead of just 'open /path/to/catalog/'

The docs say nothing about that. So, please tell me what I'm missing so I can move on. Thanks!

The import command is for import single file into open catalog.
Your need is "open" as showed in this sample.
Code:
set ThePath to path to desktop folder from user domain
set TheFolder to choose folder default location ThePath

tell application "iView MediaPro"
   open TheFolder
end tell

"choose" return an alias so you can use "open TheFolder".
if "TheFolder" is a string you must use "open alias TheFolder".
